FRIED CHICKEN

Mr. Alpenglow can’t say “no” to fried chicken. My favorite recipe comes from Thomas Keller’s Ad Hoc cookbook. You immerse the chicken in a fragrant brine (kosher salt, lemons, honey, garlic, bay leaves, peppercorns, thyme, parsley), coat it in buttermilk and seasoned flour, and fry. It’s utterly delicious.
