Mr. Alpenglow went all out for his 30th birthday menu, which paid homage to the chefs, restaurants, and dishes that inspire him: chicken liver mousse after The Standard Grill; Thomas Keller‘s intensely flavored lobster broth; a persimmon salad like one at San Francisco’s Bar Tartine; a short rib pie that April Bloomfield might make; comforting Argentinean fried potatoes; and a pine nut tart lifted from Mario Batali’s Babbo.
